Festive Pumpkin Waffles

This makes a delicious fall breakfast. I made them for a North and South party I had last weekend (along with some delicious wassail and apples from the tree in the back yard) and they were a big hit!

2 cups all purpose flour
2 T baking powder
1 T cinnamon
1/2 t coriander
1/2 t nutmeg
1/4 t salt
4 eggs separated
1 1/2 cups milk
1 cup canned pumpkin (real pumpkin works too, just bake, cut it off the shell and puree)
3/4 cup butter melted
1 T vanilla extract

Combine flour, baking powder, spices, and salt and set aside.
In a second bowl beat egg yokes slightly then blend in milk, pumpkin, butter and vanilla.
Add pumpkin mixture to flour mixture until just combined.
In another bowl beat egg whites until stiff and peaky. Gently fold into batter until combined.
Cook in your favorite waffle iron and enjoy!!
