1/2 tsp baking soda
1/2 tsp salt
12 Tbs unsalted butter, melted and cooled until warm
1 C packed light or dark brown sugar
1/2 C granulated sugar
1 egg + 1 egg yolk
2 tsp vanilla
1 1/2 C chocolate chips
Preheat oven to 325 degrees. Whisk dry ingredients together in a bowl. Mix butter and sugars on medium until thoroughly blended. Add egg and egg yolk, and vanilla until combined. Then add dry ingredients, just until blended. Stir in chocolate chips to taste.
Roll 1/4 C of dough into a ball, split in half and put back together with jagged surface up. Place on cookie sheet lined with parchment paper and bake for 15 to 18 minutes until golden brown on the inside and the outer edges start to harden. Rotate baking sheets if necessary.
Variation:
Add 1 1/2 C dried coconut and 1 C toasted almonds or pecans, walnuts or whatever kind of nuts you like.
